Because I am a HUGE nerd, I made a spreadsheet with all the students on it. It has basic information... mostly age, birth date, patronus, boggart, etc. on it. I wanted a reference so I wouldn't have to go through each person's information when I wanted to know something. If you think it would be helpful for you, too, you are more than welcome to use it.
It's here on my google docs. It's large, so utilize the scroll bar at the bottom to get all the information.
I know I probably got some information wrong, so please correct me! I'll change it and keep it up to date as we get new students and/or lose any.

Because it just comes off really weird to me to see 'nationality' and then have the 'American born' students listed by skin color. :/ I think, if you want to have that listed too, you should make a separate column for it.
I would really love it if everyone could give me the nationality of their character. I don't care if they are American born, it's nice to know the demographic of the game. I only put "white" for the people I didn't know or guessed at.

Ging is American, though. Her family has been in the States since the 1600s so she's really not connected to Europe anymore, and mostly Heinz 57 mix of Purebloods in the States.
The Redd family, too, is pretty much just American. They've also been here since the 1600s. Unless Kat or Amie want to chime in differently? Idk XD
Also, if you want to demographics, you might as well list French with English for Gael and Leon. XD Their half and half, though they general identify themselves as English.

The only thing I saw wrong was Ella's hometown :'] It should be Ypsilanti like Jenny's hahah I think Plymouth was their old hometown from our previous game ahahah, guess it never got changed!

If you want specifics on Jake's ethnic background, his family has all of that pretty well documented. He's mostly English (Anglo-Saxon) with a bit of French (Norman) tossed in.
I think the Van Ren's are pretty standard American at this point. Same with the Ayers. Colby's paternal grandparents are probably first generation Irish immigrants, but pretty much American through and through.
Okay, so this is awesome. You seem to have all of Amy's info in order.
Also re: the whole nationality thing, I think the thing is that you're mixing it up with ethnicity. Nationality is pretty much what country you're from (pretty much any kid born and raised in America would fall under the category of American, no matter what their racial/ethnic background), whereas ethnicity is basically one's background/ancestry/race. Anyway, Amy's nationality is American, and her ethnicity is German, Danish, and Irish.
The only change I was going to suggest was the nationality/ethnicity thing, but that's already been sorted out so nevermind!
Ciaran's ethnicity is fine as is. According to the system I use at work he would come under 'any other white background', but that's rather unspecific and he does indentify strongly with his roots.
Btw, do you want to do a Molly/Ciaran thread? I am kind of itching for Molly to sink her wholesome, Mormon claws into Ciaran. XD
What's funny is I've actually been working on the same thing and just saw this post. Mine is a little more detailed, lacking nationalities, but good for you if you want to do this for yourself! I was going to make mine public as well, so we can compare at some point!
That is funny!!! I started it mostly because when creating characters I like mine to be a little unique and I don't want to step on anyone's toes by making mine too similar to someone else's... thus the list. This way I can avoid duplicating a patronous or date of birth or what have you. We will definitely have to compare!
