Superman was about to make another quip prior to ripping the womans head off when the shield knocked him back. It takes a lot for that to happen, unless there's magic involved...
His reactions are good enough to keep his whole head form being lopped off, but much of the front part of the neck is now cut loose and as is instinct Superman is now reaching for his throat.
